Sweet Earth Teriyaki Burger with Grilled Ginger

2 Sweet Earth Teriyaki Veggie Burgers
2 Whole Wheat Sesame Buns
2 tbsp Olive oil, divided
1 Red Onion, thinly sliced
1 Tablespoon, Sesame Seeds
2 decent sized pieces of leaf lettuce
1 thumb of Ginger, thinly sliced
1 Head broccolini, Steamed
Mayonaise (Vegan or Vegetarian)
- Prepare the Veggie Burger: Cook the burgers according to package directions. There are oven and skillet cooking options.
- Prepare the Ginger & Broccolini: Steam your Broccolini until soft. While you are waiting, thinly slice the ginger with a mandoline, then place on a grill for 2 minutes each side or until grill-mark show.
- Prepare the buns: Drizzle the inside of each bun with 1 tbsp olive oil. Place in a toaster oven and toast until slightly browned.
- Assemble the burgers: Spread a small amount of mayo over the inside of the buns. Top the bottom buns with the leaf lettuce, sliced onions, teriyaki burger, broccolini. Top with Grilled Ginger & Bun
