2 tbsp Olive oil, divided
1 Red Onion, thinly sliced
2 decent sized pieces of leaf lettuce
1 Cucumber, thinly sliced
1/2 Cup Cherry Tomatos, diced
1/2 Cup Feta
Hand Full of Mint
2 Whole Wheat Buns
1/4 cup tahini.
juice of 1 lemon (2 tablespoons)
2 cloves garlic, minced.
salt and pepper, to taste.
water to thin (add 1 tablespoon at a time)
Prepare the Veggie Burger: Cook the burgers according to package directions. There are oven and skillet cooking options.
Prepare the Tahini Sauce: Combine all ingredients in a bowl or jar and mix well. It may take some effort to incorporate the tahini in the liquid, be gentle and it will all come together.
Prepare the buns: Drizzle the inside of each bun with 1 tbsp olive oil. Place in a toaster oven and toast until slightly browned.
Assemble the burgers: Spread a generous amount of Tahini Dressing over the inside of the buns. Top the bottom buns with the leaf lettuce, the burger, sliced cucumber, diced tomatoes & onion. Top with Mint, Feta and bun.
