2 8oz. Pkgs. Sweet Earth Traditional Seitan Grounds ( Or Tuscan Savory Grounds )
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
3 medium white button (table) mushroom caps, diced
½ cup diced black olives (optional)
1 (6 ounce) can tomato paste
1 tbsp. extra virgin olive oil
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
1/2 teaspoon black pepper
Vegan parmesan shreds (optional)
Seitan, onion, garlic, mushrooms and green pepper in a large, slightly oiled saucepan. Cook and stir until seitan is warmed through and vegetables are tender ( 5 to 7 minutes, stirring frequently).
Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.
Serve over your favorite vegan spaghetti or pasta.
