8 rice paper rounds
1 package SweetEarth Curry Recipe Seitan, sliced lengthwise
4 oz. fresh spinach
2 carrots, julienned
1 papaya, peeled and julienned
8 oz. rice noodles, cooked
2 Tbsp. fresh basil, chopped
2 Tbsp. fresh cilantro, chopped
2 Tbsp. fresh mint, chopped
Heat a non-stick pan on med-high heat. When pan is hot, sear both sides of each halved seitan strip until browned, set aside.
Working one at a time, soak rice paper round in warm water until soft and pliable, then arrange equal portions of the remaining ingredients on the bottom half of the round (leaving space on each side for folding). Fold bottom flap up, followed by the two sides and roll until sealed. Repeat with the remaining ingredients until all are wrapped up.
Serve with Thai sweet chili sauce or coconut peanut sauce.
